Ingredients
  1. 2 (6 ounce) cans tuna or salmon, in water
  2. 1 stalk celery, chopped
  3. 1/2 cup grated carrots
  4. 4 Tablespoons low-fat mayonnaise
  5. 1/4 teaspoon black pepper
  6. 5 whole wheat English muffins
  7. Cooking spray
  8. 1/2 cup grated cheddar cheese
Instructions
  1. Open cans of fish and drain off water. Place in bowl.
  2. Add all vegetables, mayonnaise, and pepper to bowl. Stir until well-mixed.
  3. Slice English muffins in half. Place on cookie sheet coated with cooking spray. Top each muffin with fish mixture and sprinkle with cheese.
  4. Place cookie sheet under the broiler until cheese is melted and begins to bubble (about 3 minutes). Let cool for 2 to 3 minutes before serving.

  1. Place sandwiches on microwave-safe plate. Microwave on full power for 30 seconds. Repeat as needed until cheese is melted. Let cool for 2 minutes before serving.
  2. Need gluten free? Try microwaving the tuna and cheese in a bowl, then piling it onto a cold, crisp lettuce leaf!
