
Stir-Fry Vegetables

Ingredients
- 3 cups raw vegetables, washed and cut into bite-size pieces
- 1 small onion, chopped
- 1 Tablespoon vegetable oil
- 1 clove garlic, minced
- 1/4 cup water
- Salt, pepper or low-sodium soy sauce, if desired
Instructions
- Prepare vegetables. Set aside.
- Heat oil in 10 to 12-inch pan over medium heat. Stir in onion and cook just until it is limp.
- Stir in rest of vegetables. Add water, cover and cook 2 to 4 minutes until vegetables are just tender.
- Season with salt, pepper or soy sauce if desired. Serve immediately.
Food Safety Tip
- Add tofu, left over meat or poultry to use as main dish.
- Good vegetables to stir fry include cabbage, broccoli, celery, carrots, green beans, bell pepper, zucchini, spinach, and bok choy.
