
Mac and Cheese

Ingredients
- 2 ¼ cups low-fat (1%) milk
- 2 cups (8 ounces) dry macaroni
- 1 ½ cups (6 ounces) shredded cheddar cheese
- 1/2 teaspoon salt
- 1/2 teaspoon mustard
- 1/4 teaspoon ground black pepper
Instructions
- In a medium pot, combine the dry macaroni and 2 cups milk. Cover with lid and bring it to a boil over medium/high heat while occasionally stirring.
- Reduce heat to low, cover, and simmer until the pasta is tender (about 10 to 15 minutes). Stir often to keep from sticking. Replace lid after stirring.
- When the pasta is soft and has absorbed most of the milk, add the last 1/4 cup milk, salt, pepper and mustard.
- Turn heat off. Add the shredded cheese. Stir until cheese is melted. Serve immediately.
