Egg and Veggie Scramble

Prep time: 7 minutes | Cook time: 5 minutes | Number of Servings: 4
Ingredients
- • 6 eggs
- • 1/2 cup chopped red bell pepper
- • 2 cups chopped fresh spinach leaves or other greens
- • 1/2 cup reduced-fat cheese
- • Salt and pepper to taste
- • Cooking Spray
Directions
- Pre-heat a 10-inch nonstick pan on medium heat.
- In a medium bowl, beat egg with a fork until foamy.
- Stir vegetables, salt and pepper into egg mixture.
- Lightly spray skillet with cooking spray. Add egg mixture.
- Cook over medium heat, stirring often. When egg is cooked thoroughly (160° F), sprinkle with cheese and serve.
