Egg and Veggie Scramble

Prep time: 7 minutes | Cook time: 5 minutes | Number of Servings: 4

Ingredients

  • • 6 eggs
  • • 1/2 cup chopped red bell pepper
  • • 2 cups chopped fresh spinach leaves or other greens
  • • 1/2 cup reduced-fat cheese
  • • Salt and pepper to taste
  • • Cooking Spray

Directions

  1. Pre-heat a 10-inch nonstick pan on medium heat.
  2. In a medium bowl, beat egg with a fork until foamy.
  3. Stir vegetables, salt and pepper into egg mixture.
  4. Lightly spray skillet with cooking spray. Add egg mixture.
  5. Cook over medium heat, stirring often. When egg is cooked thoroughly (160° F), sprinkle with cheese and serve.
